Nicole’s Gluten Free Double Chocolate Chip Cookies

Ingredients
- 1½ cups organic butter, room temp
- 1¼ cups organic granulated sugar, or coconut sugar
- 1¼ cups packed brown sugar
- 1 tablespoon vanilla
- 2 organic eggs
- 3¾ cups Bob’s Red Mill All-Purpose gluten free flour
- ¼ cup cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2-3 cups chocolate chips
- 1 cup pine nuts, optional, but so delicious
Instructions
- Preheat oven to 350. Mix butter, granulated sugar, brown sugar, vanilla and eggs in one bowl. Mix gluten free flour, cocoa powder, baking soda and salt in a separate bowl. Combine the two bowls into one and add the chocolate chips and pine nuts. Drop roughly 1-inch balls onto parchment lined baking trays about 2-inches apart. Bake 12-15 minutes, or until they feel relatively solid. Remove and let cool on cooling rack.
