As my cuisine has become more and more focused on addressing special diets and autoimmune issues with my clients deliciously lately, I have been deepening my research into what is commonly known as The Paleo Diet. Relatively new in the culinary & dietary world (initially introduced in 2010), I pretty intensely balked against this particular way of eating because 1) I love legumes and they’re not allowed, and 2) I just couldn’t believe any caveman ate that much coconut or almond meal. That being said, a recent article gave me a little more insight and has made me feel a lot more comfortable embracing this way of cooking as a tool for nutritional healing. (… and FYI – beans CAN be IN, baby!)
Why? It’s good old-fashioned home-cooking, with organic whole ingredients, lots of fruits and vegetables, responsibly and humanely raised animal products, crazy chemicals and pesticides not invited.
